Something’s Fishy!
June 10, 2013 10:41 pmWe are getting into summer and it’s time to eat light and healthy! Here’s a quick, easy and delicious marinade that has a very summery feel. Create a marinade of:
- 1/3 C fresh squeezed lime or lemon juice
- 1/3 C honey
- 2 T apple cider vinegar
Stir ingredients until completely blended. You can then add garlic and dill (to taste) and put it over fish. It works great with mild or strong types of fish. You can wrap the fish in foil with the marinade, seal it and cook it on the grill, you can cook it in a pan, bake it or broil it. The flavor is wonderful and when you serve it the marinade goes great over vegetables. There is no oil or preservatives so it’s healthy and since fish cooks up in no time, you have a quick, easy, delicious way to make lunch or dinner.
