An Apple A Day… How about 2?
June 11, 2013 4:02 pmSo I am on a recipe jag and finding wonderful ways to eat better this summer and have it be DELICIOUS!! How about a salad dressing that’s just what the doctor ordered…
- 2 Apples (can be with or without skin, changes texture)
- 2 T Apple Cider Vinegar
- 1/3 C Raw or Roasted, but unsalted Cashews (or other nuts of your choice, except peanuts)
Puree in your blender. It makes a thick dressing (which you can thin with apple cider or apple cider vinegar if you need it more watery, but personally I love the thick texture). Put it over your best fresh salad. Add sliced almonds, nuts or seeds. I like to add dill (it just makes me happy to eat dill).
Try it and let me know what you think. No oil, you are eating nuts with your vegetables (which means you will get more vitamins and nutrients out of both) and its wonderfully summery, fresh and filling!

PS – It makes a nice amount so you will have enough to share – which is a great reason to gather friends and make it into a party! 🙂
